Anyone have a good soup recipe?

Leek and potato Soup

 

2 leeks (about a pound)

6 cups fat-free low sodium organic vegetable or chicken

broth

3 cups chopped onion (about 1lb)

1 cup chopped celery

1 cup chopped carrots

2 Tb. Olive oil

2 garlic cloves minced

2 cups peeled Yukon gold potatoes ... It was about 2

large( about 1lb)

1/2 tsp pepper

1/4 tsp fine sea salt

 

 

1.Remove roots, outer leaves, and tops from leeks.

Cut each in half cross wise and cut into 1/2 inch slices.

Immerse in cold water ..swirl and drain.

 

2. Bring broth to a boil in large kettle over medium high

heat.

 

3. Heat oil in a large skillet ... Then add all

ingredients except for potatoes.

Partially cover ..Cook for twenty minutes or until

vegetables are tender.. Stirring occasionally!

Add this to your hot broth along with the Potatoes and

bring to a second boil... Then reduce heat and let summer for 10 minutes till

potatoes are tender.

 

Stir in salt and pepper...

Serve chunky or purée in blender.

I uploaded a several soup recipes for anyone to enjoy. I haven't made them all,

but I've saved them because they look good & hope to make them someday!

 

Kelly, I don't have your direct email. I tried to send them to you through

but couldn't attach. Feel free to contact me directly if you want the
