It is just that in the past years most grains have been altered and spliced so much that the body recognizes their proteins as foreign. There might be some grains that haven't been touched too much like Kamut, millet, spelt, and others... I can certainly see people being more allergic say to wheat than to brown rice because of all the alteration of wheat.
