Guest guest Posted October 4, 2007 Report Share Posted October 4, 2007 I have limes cooking in a copper pan on the stove as I write and urgently need to know if I can leave them in the pan overnight before cooking the again the next day with the sugar in, to make my marmalade. The acid overnight in the copper was of concern to me. A speedy response would be appreciated if anyone might know the answer to this query - I have not used copper before to cook in. It is not at all a good idea to cook limes in a copper pan (if it is not plated by some other matel). Leaving them in the pan overnight is worse. Guest guest Posted October 4, 2007 Report Share Posted October 4, 2007  Lime reacts with copper of the vessel forming copper chloride which is a poison. Reaction takes place in a brass vessel also. In minute quantities copper chloride is beneficial but not if regularly taken by allowing lime juice to remain in a copper/brass vessel overnight specially if hot. While water left overnight in a copper vessel and drunk first thing in the morning is good for health, the same water if not pure can react with the vessel forming copper chloride. Specially true of chlorinated water or some of the ground waters.
