I have a history of being very allergic to everything (I have lupus), and I have had no problems with the carrots. You also juice other greens, like chard, lettuces, and apples. You can find these books in most health food stores, bookstores and libraries. One that I use quite often (among others I have) is " Juicing For Life - A Guide to the Health Benefits of Fresh Fruit and Vegetable Juicing " by Cherie Calbom and Maureen Keane. I do have my alkaline cocktail daily (the cabbage and carrots), but I honestly have to admit, I am not at all fond of the taste!!! It helps to add other, better tasting juices daily too. It makes the taste of my alkaline cocktail more tolerable to know I will be having something else that tastes alot better in a short time! Good luck with all of this research you seem to be doing on juicing. Keep it up. It is such a tremendous nutritional benefit to maintaining optimum good health.
