Following is a response I saw on another list, and it really has great ideas in it for all of us, especially diabetics! Just wanted to warn you, though: beans are a great food, but must be eaten in extreme moderation by all diabetics, and some of us cannot touch them! Also, I am no fan of Splenda - but in tiny amounts, I guess it isn't going to kill anybody! Linda Q. What do you all eat as side dishes with a meal? A. Veggies. I cook a variety of veggies with eachmeal. Often steamed brocolli, cauliflower, greenbeans, waxed beans, spinach. But also salads (lowcarb or carb free dressings), pickles, sauerkraut (yesI do sometimes have too much sodium!!), homemade(sugarfree) slaw, stewed tomatoes. Alot of unusualveggies: sauted brocollirabe with garlic, beansprouts with ginger & green onions, shredded zucchiniwith lemon, bok choy with green onions, red cabbagestewed in vinegar & Splenda with caraway seeds,asparagus vinagrette, artichokes vinagrette, sautedpeppers & garlic, raw fresh veggies: radishes,carrots, celery, cherry tomatoes, zucchini....the listgoes on.I almost never have pasta, rice, noodles. . I usemashed cauliflower in their place. I do make alot ofstews - serve them on mashed cauliflower. When I makeroast chicken, I have a tablespoon or two of stuffing.I rarely have bread, muffins, biscuits etc. In thesummertime, I sometimes do have a small (3-4 inches)ear of white corn. But not everyday. I also onocassionally have peas, pea pods, winter squash. I domake dishes with beans - such as chili or amultiveggie salad with a beans as one of theingredients. But not anything like refried beans.So basically, I eat a wide variety of veggies. So Idon't get into too much of a rut. DIABETIC?
