I found this extraordinary recipe on www.livecoconutoil.com. I LOVE cheesecake, but the commercial kind is as many as 60 carbs PER SLICE - that's almost my day's total! I can't wait to try this - I think I'll love it!

No-Guilt Cheesecake

 

 

 

Two pounds of cream cheese Two tablespoons of heavy cream 1 Teaspoon of stevia powder (or to taste) 4 large eggs (at room temperature) 1 Teaspoon pure vanilla extract (preferably without alcohol) Beat the cream cheese with an electric mixer on medium until it's completely smooth, then add the stevia. Add eggs one at a time and beat each one in well before adding the next one. Add in the remaining ingredients and stir well. Pour the cheesecake into a buttered 9-inch spring form pan and smooth off the top. Cover the bottom and sides, not the top, with aluminum foil and place into a preheated 350 degree oven. After 10 minutes, turn the oven down to 275 degrees. Bake the cheesecake for 1 hour longer, or until the edges are lightly browned. Turn off the oven and run a knife around the edges of the pan to loosen the cheesecake from it, and then return the pan to the oven, with the door ajar, to cool slowly. After 1 hour, you can remove the pan from the oven, cover it with plastic wrap and put it in the fridge overnight. It will be fresh for up to three days. (Like it's really going to last that long??. Not!) To remove it from the pan, run a knife around the edge again and pop off the spring form rim. Serve, eat, enjoy, smile!
