I'm carb confused...

Dear Pam,

 

Concerning your questions about what really is low carb, I would certainly doubt there is ANY "true low carb" - this is a lifestyle, a way of life, and of handling our nutritional requirements. Some societies (Eskimos, for example) get almost zero carbs when living remotely, yet they thrive. Atkins wants us to be extremely low - under 30 per day - that's OK, if it works for you. It DOESN'T work for me. I follow the recommendations in The Schwarzbein Principle by Diana Schwarzbein, MD, and find that they are the easiest for the majority of us to work with on a day to day basis. There are others - Sugar Busters, Suzanne Somers' book, etc., but Atkins and Schwarzbein are MDs and I feel their advice is far more technical than the others.

 

Then I am learning there is a difference in how the body handles carbs. I've been studying and experimenting for many months with the difference in how my body (can't speak for others) works with the following: Carb grams, fiber grams, sugar grams PER SERVING.

This is what I have found:

 

On an average cereal box (my husband eats it, I won't touch it) there are 28 grams of carb, 1 gram of fiber, and 15 grams of sugar per serving.

 

Though I don't eat cereal very often, preferring to keep grains to a minimum, the one I eat is 13 carbs per serving, 2 grams of fiber, and ZERO sugar!

 

What I've come up with is there is a direct relationship between the number of carbs, from which you subtract the number of grams of fiber to get "net effective carbs", but I've taken it one step farther: The REAL factor, which I've never seen mentioned (it is NOT the same as glycemic index or glycemic load) is how many sugars are in it - which is why fruit is almost always bad, no matter how little or what the carbs are!

 

Then, here's the other thing, which figures into my newfound knowledge and study about the role of fungi and mycotoxins: The little buggers LIVE OFF OF SUGARS ! ! !

OK....I'm completely confused.
