So if Vata is primary dosha then we know that gas is usually predispositioned in this dosha. If one has elevated Kapha dosha, then we know fermentation is usually already present in the body. So yeast the main culprit in the fermentation process is already present in the air we breathe. That is why natural starters used in bread dough via wheat, grain or other is usually started with air, water, and grain. If one has high Kapha then breads would not be recommended as well as carbohydrates high in diet. This only increases fermentation since fermentation needs sugar in order to grow. Rotis are non leaven, therefore have no fermentation present. They are made with wheat flour, water, and a touch of oil, freshly made and cooked. This allows no time for fermentation. However non dough is leaven, and rises thereby using fermentation ie: yeast. Simply stated what is important is to evaluate dosha balance. If balance is present then breads both leaven and non leaven ok in moderation. If Dosha's are no in balance, then appropriate choices be made. Even though sometimes fermented foods are also grounding for vata, whether heavier cheese even if the digestiion is working correctly, or breads, idlis, miso, etc. Does anyone know, is this vata tendency to weakness, which is also so high after childbirth, the reason we are taught to avoid leavened breads for postpartum mothers and after some days, can give jsut unleavened roti/tortilla/chapatti?
