Guest guest Posted January 23, 2008 Report Share Posted January 23, 2008 Kichari is a mixture of rice boiled with lentils and some spices, to make a highly digestible and nutritious meal. The rice can be white or brown basmati, and an ideal lentil to use is mung. Kichari is tridoshic i.e. it is a balanced meal which doesn't aggravate any particular dosha. This means anyone can eat it! A simple recipe is: 1 part split and skinned mung lentils, 2 parts basmati rice to make up one cup; 3 cups water; 1/2 teaspoon cumin (seeds or powder or both); 1/2 teaspoon coriander (seeds or powder or both); 1/4 teaspoon turmeric; 1/4 teaspoon salt; tablespoon ghee (clarified butter); Wash the rice and lentils in a few changes of water, then discard wash water. Heat the ghee, add the spices and stir for a minute. When the fragrance is released (don't burn it!), add the rice and lentils and the water. Bring to boil and cook on low heat for about 40 minutes. You can do variations on this by increasing the amounts of spices or adding other spices, frying some chopped onion; or adding tomatoes, cauliflower, broccoli, french beans or other vegetables.
