" All say, that heating honey above 40° C will produce toxins. Is there any classical text about that, or any modern scientific foundation? I could only find that enzymes and other biological active substances in the honey will became less active when heated above 45° C. There is only 1 toxic substance found in honey, called hydroxymethylfurfural. More than 40 mg in 1 kg indicates honey of less quality. For humans furfural can become toxic with intake of more than 50 mg per kg bodyweight. But Dr. Steidl invented a formula; which contains furfural against cancer cells. " Thanks.
