Essential oils are created by the process called steam distillation. I posted previously (today) a great site to visit regarding distillation of lavender. (This site, owned by Michel Vanhove is a bit special to me since *that* producer is the one where much of my lavender supply comes from)... and Michel helps distill it himself! Essential oils contain only the *oil soluable* **volatile** chemicals of the herb. A herbal extract (depending on how it is obtained) contian * MOST * of the oil soluable parts (volatile and otherwise) of the herb usually, but they are UNCHANGED from what the plant renders. A *solvent* such as alcohol or glycerin is used to " pull out " the oil soluable chemicals. In steam distillation ... high heat, pressure, etc. *change* some of the volatile oil components and are very different (sometimes) from the extract. They(EO's) are also far far more CONCENTRATED!!!. Hydrolats or hydrolsols (incorrectly called " floral waters " ) are the *water soluable components of the plant .. sort of like a " tea " ... and are created during the distillation process. They DO contain minute amounts of essential oils ... some ... more than others.
