(If in a hurry I just skip this part and cook continuously). 2. Drain the water from the beans and add enough filtered/bottled water to cover the beans by 2 inches. Add the garlic. Bring to a boil, reduce the heat to low, and simmer for 2 hours, or until the beans are tender but still hold their shape. Add additional water as needed while cooking. Drain. Discard the garlic. 3. Heat the oven to 350 degrees. Saute' the onion, celery,and bell pepper with herbamare and black pepper in a generous amount of Extra Virgin olive oil over low to medium heat until tender. Add this entire mixture to the cooked beans. Mix in the apple juice and molasses. If desired, add 2/3 cup of Paul Newman's marinara sauce (optional). Beans should not be soaked. I heard Jacques Pepin explain this on a cooking show years ago. Soaking beans will cause them to begin fermenting thus causing the gas that eating beans are known for. Ever since then my wife and I have just boiled beans for however many hours it takes and they come out great, and w/o the aforementioned aftereffects.
