Can I buy some? Does it taste like Best Foods (Hellman's)? I'm so sick of

half-healthy stuff they sell in the HFS.

Hi All,

Just made up a batch of VCNO based mayonnaise. It is delicious!

1) 3/4 cup of virgin coconut oil (melted then cooled if room temp lower than 25

c).

2) 1/4 cup of extra virgin olive oil.

3) 1/2 tsp of dry or regular mustard.

4) 1/2 tsp of sea salt or to taste.

5) One egg.

6) 4 tbsp vinegar of your choice.

Add all ingredients to blender except the oils. Dribble in the virgin coconut

oil & olive oil mix SLOWLY. The mixture

will become very thick.

More VCNO mixtures to follow!

Enjoy.................

Hi Starris,

This stuff comes out thick & creamy and with a slight coconut taste depending on

what kind of mustard and vinegar you

use. Give it a try. I also find a SMALL bit of cayenne adds a nice touch of

taste.

Hi Elaine,

You must have missed it?

1) 3/4 cup of virgin coconut oil (melted then cooled if room temp lower than 25

c).

2) 1/4 cup of extra virgin olive oil.

3) 1/2 tsp of dry or regular mustard.

4) 1/2 tsp of sea salt or to taste.

5) One egg.

6) 4 tbsp vinegar of your choice (helps to reduce solidifying temp)

7) A squeeze of two of Lemon juice to taste and maybe a little cayenne.

Add all ingredients to blender except the oils. Dribble in the virgin coconut

oil & olive oil mix SLOWLY. The mixture

will become very thick & creamy.

The mayonnaise I buy in the HFS is 'Spectrum Lite Canola Mayo. Their

I often wonder if it is truly healthy. It has a reasonably decent taste.

Hi Jean,

Have a look at:

crsocietyVCO/OilAnalysis291201.gif

Canola has a sensitivity to free radical damage of 545 while VCNO rates 32.

While Canola is better than say Soy oil, I

would still go for the VCNO.

Hi Tracy,

Should be. Most of them use a local low tech village processing system

developed by an Aussie CSIRO scientist. Who did

you buy it from?

If it is VCNO it should have a light but delicate and slightly sweet smell of

fresh coconuts.

The RBD form has almost no smell.

Hi Greg,

I know you are right. I just have one problem and that is cost. I

use so little mayo...the quart size lasts a year....I buy a small size virgin

olive oil too. The gallon size from info.com makes it affordable but I think

it would take me many years to use it.

The HFS has 'Spectrum Organic Expeller Pressed Coconut Oil' for $5.40

for 14 oz. It says it has no preservatives.and is processed in accordance w/

California Organic food act. I just looked it up in the Spectrumnaturals web

page. It is either semi-refined or refined so it is not really very good.

Hi Jean,

You will be surprised at how quick one gallon will go when you start using in in

ALL your cooking & baking.

Hi John

I am waiting for it still, so I will have to let you know. Is it that

different from the Philippines variety? Hope I like it.
