We use Aussie non GM Golden Canola. http://202.139.253.249/default.htm I'm experimenting with a extra virgin olive oil and flax oil mix to get the fatty acid ratios I feel are the best. Once I get the mix and taste right, I'll mix in some good Aussie butter to make some margarine like stuff. Don't ever fry with anything else but olive oil as the heat does bad things to the Omegas. Hi Brian, The shorter the chain length the more the fatty acid will survive heating and be burnt for energy. As chain length increases less and less is burnt as more and more is stored as fat. Also as the number of double bonds increase oxidation risk climbs. Butter actually has more short chain fatty acids than coconut oil and is better if you must fry, which is not a good way to cook food. You have to get that elsewhere. Coconut oil is known for anti-microbial, anti-fungal, and anti-viral properties. It is currently being used successfully in lowering the viral load of AIDS patients.
