I bought some for my mom, don't remember the brand name, from a local co-op and it was quite fizzy like kefir and seemed like the real thing. It was made from raw milk also. Was it likely just a good imitation. Also, it got thicker and thicker as it sat, even in the fridge. p.s. I joined the kefir list and I am excited about getting some grains and making my own. Thanks for > sharing about this. > > Donna Dear Donna, Of course I don't know for sure about the kefir that you bought, but from what I read about the only kefir commercialy made that uses grains to make it is made in traditional kefir consuming areas like Russia and adjacent areas. Commercial kefirs usually do not use natural kefir grains to make commercial kefir and all of the kefir kits and makers do not use real kefir grains either. Using grains is natural but not consistent in its results ( its naturally changing over time as some yeasts and bacterias grow and then recede but always trying to adjust to a good symbiotic relationship).
