Let them dry, and grind them in your pepper mill as needed for a black pepper replacement and an excellent natural digestive enzyme. Just want to add that papain, which is effective in treating cancer is abundantly present in the the dried and specially the fresh leaves as well as the skin of the green papaya fruit.
