Sadly though, it is likely that most people will not even realize that the almonds they are buying labeled " raw almonds " will actually be cooked almonds from California. I hate to see the entirealmond industry suffer, but once almonds from California become pastuerized we will have no choice but to choose only almonds labeled as originating from outside California. Best by far to buy only " organic " almonds, just as it is for all fruits, nuts and vegetables. If the almonds originate outside the US, one should be careful that they do not come from one of the countries south of the border where pesticides banned in the US are still used (yes, folks, although we have banned a number of pesticides, we routinely import fruit and vegetables from coutnes where they are allowed).
