I have dealt with people who have come to me with environmental illness, and one common link I've seen with them is the lack of red meat in their diets. I know one vegetarian for 18 years who was forced back onto red meat through EI because her liver was able to deal with the vegetarian lifestyle. There are a few people who don't need red meat (usually of Indian or Korean descent), but most of us need it to live a healthy life. In the early 80's, following what I thought was a healthy thing (as the government and doctors told us it was), I took my family off red meat and went to fish and chicken, with very rare intake of red meat. That may have been a very critical error that set my daughter up for EI. She was just a toddler at the time. She really did not eat red meat much at all her whole life, then in early 2002 she developed EI. Once her doctor fixed all her allergies, he got her back eating red meat. I've learned a lot since then and also have seen a number of EIs, and liver is always compromised in EI, and part of the compromise seems very often to be related to lack of red meat in the diet. Fresh fruits and vegetables, of course, are very good for you too. The carbs that are not good are the processed ones - the further you go from what Mother Earth gives you the further you go from healthy eating.
