I'm going gluten-free [at least for a trial period] which isn't easy for the part of me that loves to bake. I made my own GF all-purp. flour equivalent using a recommendation I found on the web. 2 T. potato flour plus rice flour to equal 1 cup 1/2 t. baking soda 1/2 t. cream of tartar 1 t. guar gum [or xanthan gum which I couldn't find] Cranberry Honey Scones 1 c. GF flour mix 2 t. baking powder 3 T. butter, softened 1 egg, beaten 1/2 c. dried cranberries 1/2 t. orange zest 1 t. orange juice soy/rice milk to brush on the tops Add the ingredients in the order listed. If you find the dough too dry add a splash of your milk. I found this dough very easy to work with and roll out. I cut 2 inch circles. This recipe makes 11 scones. bake at 350F for 7-10 min The texture is slightly different from regular scones but I didn't find it objectionable in any way and am delighted with the results.
