I've been trying to use less and less white sugar these past 5 months. http://www.geocities.com/HotSprings/Chalet/2434/Stevia.htm Blueberry Syrup with Stevia " Cooking with Stevia " by James and Tanya Kirkland, 1 cup blueberries ½ cup apple juice 1 ½ teaspoons cornstarch 2 teaspoons stevia blend or 1/4 tsp. stevioside 1 tablespoon lemon juice 1 tablespoon non-hydrogenated margarine Combine berries and apple juice in a blender or food processor; blend till pureed. In a heavy saucepan, combine blueberry puree, stevia, and cornstarch; mix well. Cook, stirring constantly, till thick and bubbly. Continue cooking and stirring for two more minutes. Remove from heat. Stir in lemon juice and margarine. Makes 1 cup. Serve over pancakes, waffles, or French toast. **I doubled the recipe above b/c I have 4 kids and they love their pancakes. I didn't have great luck with the first " Stevia " I bought. too bitter. I then bought a slighty more expensive brand that was recommended to me. That was much better but I still didn't see it as something I could really convert to for the long hall. Then a health store owner suggested I " cut " my stevia with chicory. Once I did this it was truly enjoyable. for the recipe above I had to use lime juice and I used the suggest amount for a stevia blend. I don't use margarine so I added about a 1/2 T. of butter. I'm telling you....this is good stuff and I don't really like blueberries raw. I usually have them juiced with lots of other fruits. Doubling the recipe was plenty for about 25 pancakes left just enough to refrigerate for about 8 pancakes this weekend. If you try this with pure stevioside I'd love to hear how it turns out.
