TIA..Eloise Yes, I do eat them raw. If you cook them, the enzymes and nutrients in the beans are destroyed. If you soak the dried beans, they " come to life " , bean sprouts have all the nutrients ready to grow a new plant. I soak the beans for 2 or 3 days, changing the water, then I put the drained beans in a bowl in the refrigerator, and eat 1 or 2 beans every time I open the fridge.
