Guest guest Posted June 22, 2004 Report Share Posted June 22, 2004 I'm no authority on cookware, but I've used stainless steel forever - some of mine have aluminum clad bottom to distribute the heat evenly. Personally, I think that the stainless is the most safe of the choices. I would (if I were younger just starting out cooking for family) - invest in the waterless cookware that you see demonstrated at fairs and shows - it preserves so many nutrients that would otherwise get leached out while cooking. Very expensive, though!! Maybe I'll get me just one pan.
