Apparently the vegetables are about as cooked as they can get and I'm concerned for her nutrition. Any suggestions are appreciated. Perhaps if she is near to you, you could take her a supply - and cut them up for her so she can just go to the refrig and take some out and nibble. Meals on Wheels fills you up, but there is certainly no nutrition there. The veggies she is getting from them probably have all the goodness cooked out of them - it's probably filling her up, but not doing her any good. Probably sandwiches on white bread? Cookies and cakes? Pretty much all bulk, but no nutrition. If she is convinced this is good for her, I guess there's not much you can do about it - maybe teach her about the benefits of whole foods and why what she is eating from meals on wheels is pretty much worthless, as far as feeding her body well.
