Its mainly influenced by the individual's background, whether they were brought up to be vegetarian or non-veg. Strict families who have been vegetarians for generations will continue this tradtion. Smarta Hindus (Liberal Hindus), tantrikas, certain yogis, yoginis, nathas and aghoris do not oberve the vegie rule and they continue to consume non-veg. Swamis and superstitious people often tell others (out of their own ignorance) that they cannot wear rudraksha if they are eating non-veg food. In modern times, its mostly a matter of personal choice and for health reasons whether a person chooses to be vegetarian or not.
