Those that have no resemblance are taken for carving into idols. Some craftsmen leave the roots dangling from these idols. I don't know how to find Swetark Ganesh and only know that its also called Aak or Arka plant. Its a rare White plant which also has White flowers. This is a rare plant and cannot be found easily. Another type of Ark is known as Madar which is poisonous but is widely used in Ayurveda and Unani. It has purple flowers and can be found everywhere in India (its leaves are not eaten by animals due to the poison). The Madar plant that bears white flowers is Very Rare. The harvesting of Swetark Ganesh is like this : A day before Pushya Nakshatra, people invoke and offer prayers. On the next day of auspicious Pushya Nakshatra, they dig out the roots of Swetark Tree and then they locate the branching of roots that resemble the form of Lord Ganesha. Then they use Silver or Gold Cutters to give these roots the shape of Lord Ganesha. But at the same time they do not disturb the natural shape of the roots resembling Ganesha, thereby preserving the piousness and sanctity of the idol. To get darshan and blessings from Swetark Ganesh, you can use either of the following 2 mantras : Om GuNg Ganapataye Namah. Om Dung Gung Karyasidhye Swetark Om Dung Gung Phat. I think the botanical names for Swetark are : Calotropis gigantea, Asclepias gigantea of the Asclepiadaceae family but don't quote me on this as I'm not a botanist. Please do some research at the library for these names in the Botany or Ethnobotany sections. There are many Indian authors who have written about these plants. In English, Swetark is also called Giagantic Swallowort but again, don't quote me. Friends with an interest in botany, please do an independent study. And if you have further information, it would be nice to hear from you.
