Well there are many stories behind it, one of them is Parshurama attacking Ganesha and breaking one of his tusks.... another very famous that When Vedvyas asked Ganesh to write Mahabharat, Ganesha took out a piece of his tusk and used as pen.. What is the hidden meaning behind this- as photos of Hindu Gods are never drawn randomly, they always have a hidden meaning. For example Kali is black as she is quality less(Nirgun). She is naked as she doesnt wear coverings of Maya( & not because she is worshipped in an erotic manner, as many westerners believe, & by their fake Indian Gurus who are happy to oblige them).
