Yes, this principle works in the days of week, but as you said still doesn't explain why the way the horas are counted the way they are.. If we take that principle that birth happens because of Sun and death because of Saturn that what is the role of other planets in-between them (Moon, Mars, Mercury, Jupiter & Venus)? My guess would be if birth happens because of Sun, than first person who takes care of us after birth is mother (Moon is karaka), than we get some (or they are already there) brothers/sisters (Mars), with few relatives/friends around (Mercury), than a period of education & Guru comes (Jupiter) and once person is finished with studies than marriage/wife comes (Venus) and at the end Yama pays a visit (Saturn). This actually reflects traditional varna-ashrama way of life when after birth person would stay with his parents until time of education when they would go to gurukula and after finishing studies (approximately at the age of 25) they would get married.
