Guest guest Posted December 3, 2004 Report Share Posted December 3, 2004 aho brother Robert, you may know it, but others in our audience may not -- simple and investment-free methods for making raw vegan nut kefirs, yohurts, and cheeses. if you do not want to invest in ordering the Donna Gates or other Kefir starter on the internet -- just as simple to use some kefir or yoghurt from your local organic grocery store -- or simply one capsule from an Acidophilus yeast supplement bottle, from the same store. [they are everywhere.] again, blend your coconut meat, or soaked almonds or brasil nuts or macademia nuts, or sunflower seeds, or sesame seeds -- blend them in your blender with enough water to make the result soupy but thick. [your preference.] have some mason or other jars handy, must be glass, and washed in chlorine-free water, with tight sealing lids. add the kefir starter, or yoghurt starter, or some actual live (unpasteiorized) happy kefir or yoghurt to what you have mixed up. [if you are adding the live product, add about 10-20 percent of what you are making up in total.] blend well together and pour into the jars, about 2/3 to 3/4 full, and seal fairly tightly. [tight enough so no air will enter, but OK if the CO2 produced slowly escapes over a day or two.] place the jars in the refrigerator, and you will have kefir/yoghurt ready to eat the next morning. getting stronger with the days, and becoming 'cheese' (floating on top of the water) with a nice strong taste after a few days or weeks. this becomes the STARTER which you now use every day to start your next batch -- again at that 10-20 percent level. not to worry, if in the first batch there was 10-20 percent dairy products -- from the yoghurt or kefir you used to start -- the small amount of dairy will not kill you, and will go on to start months and years of VEGAN culture and dieting. as we are starting a revolution to cleanse a world ... violence-free!!
