I am in the midst of wrapping up a small IT contract for Food Safety for Province of Ontario. Even though this was a IT project, I got the opportunity to be part of an inspection. I will leave the gory details out, but suffice to say that I was put off (if not seriously traumatized) better part of a week. I got to wondering, how can someone work or make a career in a meat packing(slaughterhouse) plant, etc. I could not get rid of the smell for about 3 days.
