in the biggining u must not shok your body with very restrictive diet. u should replace meat with lots of milk-products, the best is ghee, and in time u can reduce those too. proteins r in soya, cheeck-pee (hope i wrote corectly) and in milk products. if u make sour milk or yogurt and separte that water from more solide part, that water contains the highest quality type of protein: albumine, identical to that albumin we have in our blood.

I am becoming a vegetarian and would like any suggestions or advice to

make the transition from a basic American diet to a vegetarian one.

It is good decision, I think. I have done this transformation and I want to say one thing. There is an adaption issue for the body. If you suddenly stop eating meat, you may feel weak or energyless. It is better to eat cheese (good quality, whatever it means in terms of ayurveda) when you are not eating meat, so that body suddenly does not get shocked. Please be mindful of adaption of the body. Whatever be the reasons for your decision to transform. I personally feel that my body works better if I eat cheese or panneer (indian version of cheese). BTW, you have to figure out what kind of milk you consume, because probably milk is the most abused food in the west.
