In many books on Yoga and Ayurveda, chewing well (chew 32 times) and slowly is prescribed for proper digestion and reduced ama. Grand ma is well remembered for watching how fast kids used to eat and correct their style. And the Shlokas and mantras to be recited before starting the meal, eating rice and dhal before wheat chapati, the pleasing aroma of agarbatti, rangoli etc used to make "meal" nothing less than a religious ritual. Whole family together was a rule rather than coincidence. The serving members were not less than MDs, who knew the advantages of eating slow, they deliberately used to serve slow. While west is advocating "low carb", "low fat" diets, author wonders how our acharyas adviced to serve rice, dhal and ghee in the beginning itself. And one more lingering question: Sweet was left till end! Any clues? Just as reducing food intake speed helps central nervous system adjust food quantity, similarly reducing thought speed through pranayama, meditation reduces blood requirement of the brain and available blood is used for normal cell regeneration process leading to longevity.
