When we say Sun and Saturn, we do not see any difference in the first instance. They both are planets. After reading the planetary characters we will understand some difference between the planets. But, when we read the stories, we go in deeper and understand their basic nature, which will register in our mind for ever. Regarding this quote of eldest or old or young or aged is concerned, we need not look at the literal meaning. The planets stays in the orbit for ages. So, here, it means old or aged. So, wherever, Saturn is influencing, the personalities involved are older. If Saturn is in 7th house from Swamsa, the spouse will be older or aged.
