But this author is yet to see an incidence of auto-immunity in houses where an Indian country cow is being kept for milk, or Indian country cow milk derivatives are getting consumed. The allergy to casein protein, is suspected due to industrial milk of jersey cow. The differences between Indian cows and other cows are discussed in this list earlier. The casein of country cow is not as rich in protein as the buffalo milk or jersey milk. What this author suspects is that Indians, at least a large section being vegetarians, they have less tolerance for foods containing protein higher than the usual "country" variety to which their ancestors were accustomed. Hence while Khitchri is most easy to digest, other legumes are not. Ayurveda believes "local" is always good, and now with the debate of GM foods and their effects on us being in full swing, it is felt that Indian Cow is best for Indians. The epidemic of obesity started about five years after "white revolution", i.e. dairy industry in Gujarat adopted Jersey breed. And fast increase in proportion of children with congenital CNS defects or the behavioural differences exhibited in later life (early puberty, ADHD etc), so also Hormonal imbalances in women in reproductive years, perhaps all can be traced to few "food" facors. The reasons for these strong feelings is "speed" with which some of these problems reduce when "ghee" is substituted for "propoganda" oils, Cow milk is increased, and many home remedies for CNS problems using cow milk are attempted. And you may find it difficult to believe, the original Indian seed is harmless, while hy-breed wheat, where grain is large in volume but less in density, does not taste so sweet as original, is found to be the culprit. The hy-breed landed in India from West. PL-480 is the code word. Further, while chapati is harmless, Paratha or Puri becomes an antigen. While sugar is harmful, sugar cane juice is not. Ayurveda guides about different ways a food can be changed in properties.
