Monks, who are vegetarians, and will eat garlic and onion ( including many Hindu monks). They stay away from Garlic and Onion in specific periods like the rainy season. Then there are Jain ( and some Hindu ) monks, who will not eat Garlic or Onions. a) Garlic and onions are considered to be aphrodisiacs, but more importantly, they are b) grown below the earth, and are considered to be " homes"/ food of other animals ( ants / other bugs). These monks will eat only fruits, and only those that have fallen by themselves and not take them from the trees. These are rare monks, but I have met several Hindus and Jains ( non-monks), who follow this pattern in life ( of cooking without garlic / onion ).. Actually monks no longer live secluded lives devoted only to spiritual practices. They mingle with the society and perform relief activities as well. So it is very important that they are used to all kinds of food and get a balanced diet. As Sri Ramakrishna said, "It does not really matter if you are a vegetarian or a non vegetarian. What matters is whether your mind is devoted to God." I myself prefer to be a vegetarian purely on health grounds. If one is sick it is better to avoid complicated food.
