You just dissolve sugar in water in a glass and suspend a string in the water. The string will "grow" sugar crystals on it and when they stop forming, take the string out and take off the crystals. Maybe the sugar itself is "purer" and does not have the chemicals. Personally, I have my doubtsm but maybe I am wrong. At any rate, I think it would be better to use organic sugar or jaggery. ALthough it seems to me those sugar crystals were sweeter than the "rock sugar" candy sold in indian stores. Anyone know why? Are they made from white sugar, or from another form, we should ask. My understanding and experience is some of the more warming sugars (jaggery, succanat, honey, molasses, agave) I have to be careful about here in FLorida summer, and when my pitta was/is more of an issue, or I start to feel smouldery or just plain too warm. I have applied this principle with a postpartum client with mastitis and fever, whose dear indian mother wanted to use jaggery abundantly and (I was eating same food staying with them) my urine turned so yellow-orange I remembered then the heating property. WE used rock sugar then, so as not to aggravate the kapha in principle, but to support her high pitta and vata condition and demand for sweet taste still. Yes, along with putting her to bed (no easy task) we used tikta, mahasudarshan, bala and other herbs as well as peppermint oil on feet for the fever and a strong antimicrobial essential oil alternated there, which she loved and to help balance the strong vata aggravating biters. Her sister was student 4 years with Dr. Lad, did most of the herbal protocol. More than you asked for, I know.
