Dear docs,

Namaskar, Can any drs interested to discuss abt the difference abt

the Sugar, Brown sugar, Jagery, Old Jagery

Sugar candy, Palm sugar, Palm candy.

Keen to know abt the mode of preparation, Properties in both

Modern and ayuvedic views.

If any websites or any books, Pls....

Namaste;

Please be informed that white sugar is processed over charred beef

bones to receive the shine and I'm not sure how/why. The

molasses/mineral rich constituents are then added back in to make the

commercially knwn "brown sugar". I heard yesterday on an audioo tape

with Dr. Sarita Shrestha that "sugar candy" the rock sugar? can be

kapha reducing; I do not know how it is prepared, but it is much less

sweet. It is used medicinally in some cases, such as sitopoladi

churna. This is my contribution :)
