Hi I have followed your discussion on oils, and I want to come with concrete

questions. Oils are without any doubts very interesting. I use only virgin oils

(coconut and olive) and then pure coconut oil for all heated foods. My

experiences with using coconut oil are very good. Coconut oil is saturated, and

even so it is has come to my ears that it is the healthiest oil used in cooking

because the oil is stable for temperatures up to 170 degrees Fahrenheit. Unlike

other kinds of oils unhealthy trans-fatty acids are not formed in coconut oil

and it stays well without getting rancid for longer time and at higher

temperatures than other oils.

As you can see in the links that follows, coconut oil is praised. What

information can be trusted, when some of it is purely given of economical

profitable interests?

What is your views on the use of coconut oil, the quality it might provide for a

better health and about the information on the following sites listed? Another

question is why there is so little general knowledge about coconut oil, if it is

so healthy as it sounds.

Here are some of the sites I found about the positive effects of coconut oil:

3) [ “Mary Shomon: You are a proponent of coconut oil for thyroid patients. Can

you explain why?

Dr. Ray Peat: An important function of coconut oil is that it supports

mitochondrial respiration, increasing energy production that has been blocked by

the unsaturated fatty acids. Since the polyunsaturated fatty acids inhibit

thyroid function at many levels, coconut oil can promote thyroid function simply

by reducing those toxic effects. It allows normal mitochondrial oxidative

metabolism, without producing the toxic lipid peroxidation that is promoted by

unsaturated fats.”] Referred from the following site

oils are usually made rancid by processing and rancid oils breed one thing: free

radical damage of your blood vessels and body cells leading to arteriosclerosis

and cancer, among other diseases. Most people think that saturated fat clogs

arteries, but studies have shown that the fatty acids in artery clogs are about

75% unsaturated of which about 40% are polyunsaturated!)
