These are not historical, but you might be interested in two works by

the late Alan Dundes:

 

 

_Two Tales of Crow and Sparrow_, which posits a psychoanalytic

connection between feces and untouchability in India, through a study

of folklore, and

 

_Life is Like a Chicken Coop Ladder_, which engages in similar

psychoanalytic investigation of anal-retentiveness in German national

character through folklore and cultural symbols.

 

Both works have flaws in their arguments, but feature thorough (if

now dated) bibliographies, which will likely contain some gems for you.
