Carrot Halva

Amount Measure Ingredient -- Preparation Method

3 cups grated carrots (4-5 carrots)

1 1/2 cups lowfat 2% milk

1/2 cup maple sugar or organic sugar

2 tablespoons rice syrup

1/4 cup raisins

3/4 teaspoon ground cardamom

1/8 teaspoon ground cloves

1 teaspoon vanilla extract

3 tablespoons ghee or butter

or substitute

1 tablespoon ghee -- plus

1/3 cup pureed yam

1/4 cup toasted sliced almonds -- (may double amount)

 

1. Place the carrots and milk in a small saucepan and bring to a boil, stirring

constantly.

 

2. Reduce heat to medium and continue to cook, stirring often, until liquid

disappears, about 25 minutes. As the halva cooks down you must stir more and

more frequently to prevent it from burning.

 

3. Add the maple sugar, rice syrup, raisins, cardamom, cloves, vanilla, and the

ghee (or ghee and yam).

 

4. Continue to cook, stirring frequently, and scraping the bottom of the pan to

prevent the mixture from sticking. Cook until the halva is very thick and forms

a ball in the center of the pan as it is stirred, about 20 minutes.

 

5. Turn the halva mixture out onto an 8-inch serving dish, smoothing out the

paste to an even thickness. Arrange the almonds on top, pressing them into the

halva slightly.

 

6. Cover with plastic wrap and chill until firm.

 

7. Cut into squares to serve.
