Applesauce Cookies - vegan

I worked at an adventist summer camp and we made these in large batches and kept

them in the freezer. You don't have to keep them in the freezer, but they sure

were good on a hot summer day to pull one out and enjoy these delicious cookies.

Makes 40 cookies

 

1/2 c. brown sugar

1/2 c. oil

1/2 c. nuts

1 c. applesauce

1/2 t. salt

1 t. vanilla

4 c. quick or old fashioned dry oats

1 c. of craisins - use more if you like

1/2 chopped nuts (optional)

 

Blend the sugar and oil and then mix in the remaining ingredients. Drop by

spoonfuls onto a sprayed cookie sheet. Bake @ 325 for 20 -25 minutes.
