Applesauce Cookies - Vegan - Repost

I worked at an adventist summer camp and we made these in large batches and kept

them in the freezer. You don't have to keep them in the freezer, but they sure

were good on a hot summer day to pull one out and enjoy these delicious cookies.

The staff and campers really enjoyed them.JudyApplesauce Cookies

 

Makes 40 cookies

 

1/2 c. brown sugar

1/2 c. oil

1/2 c. nuts

1 c. applesauce

1/2 t. salt

1 t. vanilla

4 c. quick or old fashioned dry oats

1 c. of craisins - use more if you like

1/2 chopped nuts (optional)

 

Blend the sugar and oil and then mix in the remaining ingredients. Drop by

spoonfuls onto a sprayed cookie sheet. Bake @ 325 for 20 -25 minutes.

LOVED these!!!!  Not sure if I posted this or not-

I made them for my daughter's Montessori school Fall Party.  We are vegetarian,

along with a few others, but one boy has allergies to EVERYTHING, execpt these

ingredients :)  I made a simple icing with carrot purree for color,

confectioner's sugar, vanilla, and rice milk.  The dough was pretty thick, so I

had purchased a pumpkin cookie cutter and used a spoon to fill the cookie cutter

with the cookie " dough " and pressed the cookie onto the sheet.  they were

perfect! 

thanks for the simple recipe even I can't mess up :)
