Wasabi Mashed Sweet Potatoes

6 cups cubed sweet potatoes

water to cover

1 teaspoon salt

1 tablespoon wasabi powder

1/4 cup butter

salt to taste

pure maple syrup or brown sugar -- to taste

 

Wasabi is a hot powder or paste made from Japanese horseradish. Most

of us think of it only as a sushi condiment, be we also love it in

this dish. We recommend using a good-quality preservative-free wasabi

powder without artificial color.

 

Use about 2 pounds of the sweetest sweet potatoes -- the deep orange,

long sweet potatoes often called yams by growers. if you sweet

potatoes aren't very sweet, add some maple syrup or brown sugar to

taste.

 

Serves 4 to 6

Total time: 30 minutes

 

In a covered pot, bring the sweet potatoes, water, and salt to a

boil. Lower the heat and simmer until the sweet potatoes are very

soft and easily pierced with a fork. Drain, reserving some of the

cooking water.

 

Mix the wasabi powder with about 1 1/2 tablespoons of the potato

cooking water to make a paste. Combine the drained sweet potatoes,

wasabi paste, and butter and mash well. Add a little more of the

cooking water, if needed. Add salt and maple syrup or brown sugar to

taste.

 

Variation: Replace the sweet potatoes with a buttery white potato,

such as Yukon Gold or Yellow Finn.

 

PER 5-OUNCE SERVING: 205 CALORIES, 2.3 G PROTEIN, 8.1 G FAT, 31.8 G

CARBOHYDRATES, 4.8 G SATURATED FATTY ACIDS, 20.7 MG CHOLESTEROL,

Hi

 

I tried these sunday night! I loved it- it wasn't spicy at all- just wasabit

flavor.. I think it needs some tweeking though.. maybe i used too much

maple- but I think next time I will try adding miso and wasabi!!
