Hi Maryruth;

 

Welcome to our group! It sounds like you have lots of great stuff going on in

your life! I eat a low-fat gluten free, vegan diet like many on this list; also

very low in sodium, no soy, corn or peanuts for me. It was harder years ago but

the world we live in has become SO much more accomodating, especially in the

past 5 to 10 years, I find it easier and more fun now.

 

We mostly eat what I call " peasant " meals: whole fruits between meals as snacks,

meals are a large pot with a bunch of veggies cooked up with a legume, a pot of

whole grain rice or quinoa or buckwheat or millet on the side, with a small

handful of plain nuts. It's high quality nutrition that could hardly be simpler

or cheaper. It just takes more time initially to adapt one's thinking.

 

I vary the flavours by the combinations of veggies, herbs and spices. Very mild

curry is one of our favourites. East Indian recipes can be very useful! I have

developed a combination of the sweet curry spices that we like, make up a large

container of it so that I can just scoop up a couple of tablespoons of it into a

pot of veggies as they are cooking. I don't use any of the hot ones because my

husband doesn't like spicey.

Hi, my name is maryruth. I have a 13 yos with a string of diagnoses, one of

which is aspergers. I have researched that a gf/df diet would be best for him. I

also think that my boyfriend would be better off with the same diet. After

reading more on the gf diet for dummies, I think I may have food sensitivities

also.

 

I am already a vegetarian so the other lists I am on don't really help that

much. I am learning a lot from them, but most of their stuff have meat in them.

I have been using a lot of the veggie patties and stuff. I know that I have to

stop that now with changing to this new diet. Since that has gluten.

 

Now I am lost. All this gf food costs a lot of money. Plus, my son doesn't

like the taste. I am assured that if I stick to my guns he will adjust. He did

with the change in milk. He hates soy cheese and almond cheese. I need to try to

make cashew cheese. I know he likes that. I just haven't made it myself.

 

I work, homeschool, and am working on my masters degree in counseling so I am

very busy. I need help with recipe ideas that don't take a lot of time to

prepare. Or cost a lot of money.

 

I am glad someone from another list recommended me to this one. I am looking

forward to learning a lot.

Hi

I joined the group for a number of reasons. My 14 yo daughter is wanting to go

vegan. So I am looking out for recipes and links. My son and I avoid grains.

We are in Australia and it seems to be hard to get grain free so I started my

own business (still looking at red tape to export) if any Australians are

looking for grain free vegan pasta www.pastaathome.com.au
