Zucchini Corn Casserole

Vegan Zucchini

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 To 4 Zucchini -- sliced 1/4 " thick

1 Onion -- sliced

2 Cups Frozen Corn Kernels

1 Cup Mild Mexican Salsa

 

Place 1/2 cup water in a large pot. Add onion and saute briefly. Add

zucchini, stir a few times, then cover and steam about 10 minutes. Remove

from heat. Mix in corn kernels and salsa. Turn into a casserole dish,

cover and bake at 400 degrees for 30 minutes.
