Guest guest Report post Posted January 16, 2002 Zucchini Spinach Lasagna 1 c. Onion (chopped) 1/2 c. Bell Pepper (green, chopped) 2 Zucchini (sliced) 16 oz. Tomatoes (stewed, drained) 8 oz. Tomato Sauce 1 tsp. Salt 1/4 tsp. Basil 1/4 tsp. Oregano 9 Lasagna (whole wheat noodles, cooked al dente) 1 c. Spinach (chopped, or other greens) 1 c. Melted Cheese Sauce) Simmer onion and green bell pepper in small amount of water until tender. Add the next six ingredients and simmer for 20 minutes. Alternate layers of tomato sauce, noodles, spinach, and " cheese " sauce in a large baking dish. Bake at 350 degrees F for 45 minutes. Quote Share this post Link to post Share on other sites
