This was originally a chicken recipe. I've been a vegetarian for over

thirty years and often replace flesh with tofu. Some recipes work;

some don't. This one's not bad.

TOFU SATAY with SPICY PEANUT SAUCE and CUCUMBER RELISH

Ingredients:

1-pound TOFU

Bamboo skewers, soaked in cold water

Marinade:

1/2-cup coconut milk

1 T. vegetarian oyster sauce

2 tsp. red curry paste

1 tsp. brown sugar

1 T. chopped cilantro

1/2 tsp. ground turmeric

Peanut Sauce:

1-cup coconut milk

3 T. red curry paste

1/2-cup chunky peanut butter

1/2-cup vegetarian chicken-flavor bouillon

1/4-cup brown sugar

1 T. fresh limejuice

1 tsp. sea salt

Cucumber Relish:

1 large Japanese cucumber, peeled, halved and thinly sliced

2 shallots, thinly sliced

1 small Thai chili, thinly sliced

1/3-cup white rice wine vinegar

2 tsp. brown sugar

1 tsp. sea salt

Cilantro leaves, for garnish

In a bowl, combine all the marinade ingredients. Slice the tofu into

strips, 1 " x 3 " x 1/2 " , and add to marinade. Turn to

coat, cover and

refrigerate for up to 4 hours.

Prepare the sauce:

Bring the coconut milk to a simmer in a small saucepan. Whisk in curry

paste until dissolved, about 1 to 2 minutes. Whisk in peanut butter,

stock and sugar, reduce heat and cook until smooth, stirring

constantly, about 5 minutes. Remove from the heat and add limejuice

and sea salt. Set aside to cool to room temperature.

Prepare the relish:

Place cucumber, shallots, and chili slices in a small bowl. Heat

vinegar, sugar, and salt in a small saucepan, stirring, until mixture

reaches a boil and sugar is dissolved. Remove from the heat, cool to

room temperature and then pour over cucumber mixture. Garnish with

cilantro leaves and set aside.

Prepare the grill:

Thread marinated tofu onto the soaked bamboo skewers. Place on grill

and cook through, turning once. Serve with peanut sauce and cucumber

relish.

Oh wow, this looks yummy. I realize that it will lose 'authenticity' but I'm

leaving out the cilantro because, well, I HATE the stuff. Beth
