1l (35fl oz - 4 1/2 C) white vinegar

3 - 4 roses

Spoon measures are American spoons, that is standard cook's measuring

spoons used in USA.

The best plan is to regard 2 American teaspoons or tablespoons as 1

English teaspoon or tablespoon (eating spoons)

 

In a jar or in a bottle put the petals of 4 roses.

Avoid washing the petals but clean them with absorbent kitchen paper.

Pour the vinegar over the roses. Seal and store in a cool dark place for

at least 1 month.

Turn the bottle occasionally. Before using you can strain it.

 

A flower - flavoured vinegar that adds character to salad dressings,

chicken, duck and liver dishes, and even to fruit salads. It can also be

used for marinating meat, vegetables or fish.

Ingredients:

 

* 1 cup pink rose petals

 

* 2 springs fresh tarragon

 

* 1 quart distilled white vinegar

 

 

 

Prepare by placing one cup pink rose petals and two springs of fresh

tarragon into one liter of distilled white salad vinegar. The container

should be sealed for three weeks. After three weeks, the petals need to

be strained from the vinegar and keep the tarragon.

 

Funnel the vinegar into a decorative bottle. Add reserved tarragon

spring as garnish.

 

This stores for approximately six months.

To make 1 pint/570ml

 

* 2 large handfuls fresh pink or red rose petals

 

* 7 tablespoons white wine vinegar

 

* 1 pint/570ml purified water

 

Place the rose petals in a glass container and add the wine vinegar.

Leave in a cool, dark place for 1 week, shaking occasionally. Strain and

discard the petals, then dilute the rose vinegar with water to make a

refreshing skin lotion.

Rose Petal Cordial

 

Stir 2 tablespoons of Rose Petal Vinegar with 2 teaspoons sugar until

sugar dissolves. Pour 1 ½ cups sparkling water into a glass, add vinegar

syrup and ice cubes.

Or make a concentrate of sugar syrup and vinegar then add sparkling

water to serve in a pitcher or by the glass.

You can easily vary sugar and strength to you our tastes.
