Guest guest
Almost all Indians consume chapatis (flat rounds about 2 mm thick with 6 to 8 " diameter baked on dry or oiled hot pan. The chapati usually gets bloated an d can be torn nicely into two round parts of the same dimentions. But to make a dough of wheat flour sufficiently moist to roll it into a chapati roll before baking needs a demo and experience which every mom teaches her children and the children learn the technique by observing Mom while she is making the chapatis every day, morning and evening. Indians eat chapatis from one to as many as ten depending on their hunger and capacity to eat and digest. Sometimes besan flour is also added one to one or less that makes the chapati more nutritious. Chapatis are eaten with daal made of lentils or other similar things I am sure, some one online will explain it better so that you can try. But nothing like learning it from an Indian Mom. Besan is also boiled in plain water with added turmeric powder, salt and other masalas. It becomes very tasty and goes well, even better than daal with chapatis and cooked rice too. These are the simplest things that all Indians know. Learn it and do it after getting more info online. Guest guest
Atta is used for chappatis which you need to learn first hand in person but besan has many uses. Make a batter out of besan with salt and water. If you like the taste of chillies you may add those as well. This has to be a little thinner than cake dough, slightly. Try it and in two three times you may get the hang of it. Keep this aside. 1.) Cut thin slices of potatoes put them in the batter one by one, the batter should coat the slices, and deep fry them in oil till crisp golden yellow.. You may do this with any vegetables. We Indians call these pakoras or pakodas. you may dip thinly sliced aubergines, or thinly sliced red pumpkin, this gets a nice sweet and salty taste. we make them with paneer (cottage cheese) Onion rings can be fried or thin peices of onions give a very good taste..If you add some garlic juice to the batter it enhances the taste. 2') Boil the potaoes peel and mash them slighltly, add salt and pepper or red chillies to this you may also add some green coriander, cut finely. Make small balls out of this and dip in the besan batter where it coats the potato ball.Deep fry it till crisp golden yellow. 3) The same batter can be made thinner and you may add finely cut onions and tomatoes mix well and fry like pancakes on the flat pan, fry on both sides. serve with a sauce of your choice. 4) Make a thick dough out of besan add whatever seasoning you may like, roll into a few long rolls a little thicker than your finger put these rolls in boiling water let them boil for a while. then take out and cut into desired lengths. I keep them about half and inch long. Deep fry them to a golden brown. These can be used as snacks by themselves or these can be added to a curry till they soften. Besan is good for taking bath. Use it instead of soap.Good exfoliater. It also takes away the body odours. Just wet your body and apply the atta , scrub well and wash off. _______________________ Clearing out my pantry today I came across packets of Besan Flour and Atta Flour, can anyone give me a recipe for either of these please ) ?
