Rosemary Roasted Potatoes

3 pounds baking potatoes

4 tablespoons margarine

1 tablespoon fresh rosemary -- chopped

1 tablespoon Moon Dust (recipe follows)

 

Preheat oven to 375 degrees. Slice potatoes into 1/4-inch-thick rounds and

place in a mixing bowl.

 

Melt margarine and rosemary together in a small saucepan over low heat. Allow

to simmer briefly so that the rosemary can impart its flavor to the margarine.

 

Toss the potatoes with the rosemary margarine and Moon Dust until they are well

coated. Turn potatoes onto a baking sheet and bake for 35 to 45 minutes.

Potatoes will be golden brown and crisp on the outside and tender and moist on

the inside when they are ready. Serve hot out of the oven--cold roasted

potatoes are just not as tasty.

Moon Dust

Amount Measure Ingredient -- Preparation Method

1/3 cup kosher salt

1 1/2 teaspoons lemon pepper

2 1/4 teaspoons dried thyme

2 1/4 teaspoons onion powder

3/4 teaspoon chili powder

1/2 teaspoon cayenne pepper

3/4 teaspoon dried oregano

3/4 teaspoon dried basil

2 tablespoons dried rosemary

3/4 teaspoon curry powder

1 tablespoon Cajun spice (i.e., Prudhomme's Cajun Magic

 

Place all ingredients in a food processor or blender and puree to combine and

grind spices. Store at room temperature for several months.

 

Makes 3/4 cup.

 

Moon Dust is an all-purpose blend of herbs and spices that complements an array

of vegetables.
