I usually cook several bulbs of garlic, and I cut off just the tops off.
However, you can also break the garlic heads into cloves, leaving the skins
on. I add olive oil, thyme and a bay leaf, and season with sea salt and
pepper. I bake the garlic until it is very tender, about 40 minutes at
around 250 to 300 degrees. I baste the heads during the cooking process,
but if you break the heads into cloves, then turn them over from time to
time. Delicious on a crusty bread, or with brie cheese and bread!
